Cream of Tartar - also known as “Potassium Bitartrate” is an acid salt present in grapes and wine.

Natural Cream of Tartar

Cream of Tartar is used predominantly used in the wine industry, and the baking industry.  Cream of Tartar is also used extensively in the manufacture of sweeteners, fireworks, soft drinks, tooth paste, clock and watch making and in the treatment of metals.

The wine industry:
Cream of Tartar is extensively in wine making to assist in cold stabilisation.

The pharmaceutical industry:
Cream of Tartar is used as a diuretic and a laxative.

The baking and confectionery industries:
Cream of Tartar is best known for is use in baking powder due to its buffering effect. It also is used for stabilising and giving volume to egg whites, and as a natural additive in the preparation of meringues, biscuits and cakes. It is also used extensively in the confectionery industry to help prevent the crystallisation of cooked sugar.
